Lunch: Tofu scramble- well very loose interpretation on it anyway. Also mini french toasts.As always, gluten free and vegan!
Shirt: Galpin Auto Sports.
The tofu scramble today is one I've made before- but loaded with onions and potatoes. First I cooked the extra firm drained tofu in starch, salt and pepper. Then cooked with baby potatoes, onions, mushrooms and tomatoes. A little smoke and liquid aminos for taste. Yum. The french toast is a Ener~G ciabatta roll baked per package instructions and fried with coconut oil after being soaked in brown rice flower, coconut sugar and hemp milk. All in all a filling lunch!
This is the second Galpin Auto sports shirt I own. I have a brown one and this gray one. Cool!

Lunch: Vegan-gluten free sliders!
Shirt: Hawaiian shirt!
I have to admit I'm getting lazy in the kitchen. Maybe it's all the stuff on my mind, but my culinary creativity has taken a back seat. Today though, it became a backseat driver and steering me into this great lunch idea.
The sliders started life as one Amy's gluten free vegan Sonoma burger. I did a ying-yang slice to it:
After "bunning" them on two Ener~G Ciabatta rolls, I added the strawberries to round out both the flavor and space. The "secret sauce" was 1/4 avocado, 2 tablespoons of grape seed Veganaise, and 1/4 teaspoon of Frank's Hot Sauce. Add spinach, sprinkle with Hawaiian black salt and the sandwiches are done.
In the middle one whole box of frozen Amy's vegan gluten free mac and cheez sprinkled with paprika.
The whole plate should serve two- although I wanted to see if I could eat the whole thing and I did. I figured out roughly the whole plate was about 800 calories, if someone in counting. Considering one Big Mac is 550, this meal shared with your favorite lovely, is only 400 calories. Add one of my nut butter/pumpkin fudge bars at 65 calories, you and your special someone can have a healthy filling, tasty lunch!
The drink is my favorite to have with lunch- a mix of 1/2 coconut water and 1/2 freshly squeezed grapefruit/orange juice.
The shirt is one of my favorite Hawaiian shirts from my vast collection of Island wear. The palm trees are more subtle than the wild colorful trees on the usual tops of this nature.

Lunch: BORING!
Shirt:
For lunch I'm letting my intestines rest and am drinking juices for the day. Mostly some fruit juices, but I'm mixing hemp milk/Vega protein powder and watermelon juice a lot. So--- really can't take pictures of this... so instead I posted some words of wisdom.
Today is the first day in--- what? like 70 days that I wore a repeat. I felt weird- I saw the shirt- I put it on. I'm down to my last ten or so shirts, so I thought I'd stretch this project out until the end of June.

Lunch: tofu/"chicken wing" scramble.
Shirt: Plain black polo.
I combined a tofu scramble, peppers, potatoes, and tofu. But the tofu I used the chicken wing recipe from earlier last month. I added nooch, and a few tomatoes at the end so they wouldn't burn. It came out GREAT! I made tons..... so c'mon over!
One of the few plain shirts I own. A nice light black shirt for a hot day.

Lunch: The Big Green Salad!
Shirt: TJMaxx impulse buy.
Love this salad- kale-spinach-romaine bed with toppings of strawberries, blueberries, peaches, and tomato. A pinch of Hawaiian black salt made it great!
Like I needed another shirt. I was at TJMaxx yesterday and this shirt screamed at me to buy it. On sale at closeout price made it an easy decision.

Lunch: Fruity pumpkin pancakes!

I have two of these shirts, so no- I'm not repeating. I have a black on and a blue one. :)
So- after mopping the floors, doing the laundry including bedsheets, washing the dishes, I was ready for lunch and maybe a nap!

Lunch: The Big Salad!
Shirt: River Cities Corvette Club.
Big salad day! Lettuce (romaine always) and spinach topped with chick peas, sun dried tomatoes, strawberries, radishes and a little Purely Elizabeth blueberry hemp cereal. And as always, for dressing just a spritz of lemon and lime juice.
Ebay purchase on the shirt. Needed smaller shirts when I lost weight and this one was cheap. I love the checkered flag collar- it matches my past.

Lunch: I'm back baby!
Shirt: Writer's Guild West gift shirt.
Yep I fixed my internet issues. I bought a new modem, reconfigured my wi-fi, jumped up and touched the sky! Ha ha! So being busy, I relied on a frozen vegan dinner, Amy's vegan loaf. After eating "clean" for a while now, I feel like crap when I eat one of these boxed meals. I guess they aren't that bad for you- and maybe it's more in my head than my stomach.
In other news I fixed the gas door on my car so I don't have to open the truck to pop the gas door whenever I need to feed my beast. That is a job well done...
Someone gave me this writer's shirt, in exchange for some editing I did. Lucky me.

I've had internet problems. Yesterday I had to buy a new modem and today configuring a system. Sort of what the Beatles sung about in "Fixing a Hole!" Yes I ate lunch, just can't post until tomorrow. So for now, here is a picture of my silly pancake dude to help you (and me) to smile!

Lunch: Pancakes gone bad!
Shirt: Fixie bike on the brain.
I thought I'd try a new mix and it went horribly wrong. The egg substitution wasn't correct, I tried halving the recipe. So the batter's chemistry was off A LOT! The best thing I could do was to smother with almond butter and fruit. They tasted good- but cooking- what a pain!

Lunch: I liked yesterday's lunch- so I made the same thing today!

I like shout outs- so I'm shouting out to people on Twitter. I do five a day. So congrats if you get shouted on. I'm running out of shirts for a different shirt a day- I think I have less than ten left. So this is the new "thing" for me to keep myself occupied with. #shoutoutfriday is today!

Lunch: Rice pasta and a rather large side salad.
Shirt: Funky WMC shirt. The pasta is self explanatory, but there is more to the salad than meets the eye. It's got greens, white and red beans, Purely Elizabeth granola sprinkled on top and some of the black beans I just sprouted. YUM!
Is the past tense of defunct funky? The car shop is defunct, so did it used to be funky? I know it was run by a really cool funky guy- who just happens to be my brother!

Lunch: Tempah experiment.
Shirt: Plum Vinyl
Today I tried something. I sauteed some red potatoes with yellow peppers in olive oil/liquid smoke and liquid aminos. THEN! In another pan I sauteed tempah slices coated in nutritional yeast. When done, I combined the two with fresh pineapples chunks. I had no idea where I was going with this recipe- but it came out tasty. The tempah was crispy, and the pineapple made the potato/pepper mix really pop. So I WILL make it again! As a side, I made a green salad- topped with blueberries and strawberries!

Lunch: Amy's Organic tofu scramble
Shirt: Old Navy record disc.
Always on the lookout to help "noobs" become full fledged vegans, I am always interested when I find a shortcut to eating healthy. I've tried the Amy's gluten free lasagna, mac n' cheese, but I was excited to try the tofu scramble I found on Saturday night.
I realize that with everyone's busy lives, it may not always be possible to cook- or if someone thinks ahead and cooks on weekends, maybe by Friday they are out of freshly cooked foods. So---- enter quick dishes such as this Amy's one. Vegan, gluten free, and 320 calories. The caloric content is most likely on par with a homemade version.
My opinion? It was okay, and prefer homemade. But I will buy this one gain, and have it on hand for those days that totally get away from me and am searching for something to eat quickly!
I was in Old Navy and saw this shirt. I like records and DJing. End of story.

Lunch: Leftover pizza.
Shirt: Dominos Pizza
I took yesterday's leftover pizza and modified it a little. I added red and white beans and a splash of mustard on the top. I stared at it, with much trepidation. I was thinking that I went too far, but I took a bite..... it tasted good! Sort of like a beans with bread kind of meal. The pizza sauce complimented the tang of the mustard- or if you're from the south, twang of the mustard. Ha! I'm definitly thinking of going this way when making my next pie- Hmmmmm how about using salsa instead of pizza sauce.... Hmmmmmm
Shirt: Shout out to my old company. I worked for Dominos for years in the distribution part. I bought this store shirt so I can work in a store for a day and see if I liked it. I bought the shirt, worked my butt off for free and loved every minute. I should have bought a store when I had the chance.
I hope that these major pizza chains, especially Dominos, mainly because I have a history there, engineer a gluten free crust- so us gluten free vegans. C'mon
Dominos- can't you guys see the millions you can make expanding your menu in that veganistic direction!
