No I didn't pick it out of the garbage. I cleaned my fridge today and I needed to get rid of some veggies before they went bad. So out came the leftover pizza dough, and I piled it with peppers, onions and tomatoes.

Lunch: Vegan gluten free pizza!

Shirt: Fixie bikes are the only way, man.....

The pie might not look like much- it needs color. But I used the tofu chicken wing recipe and added those to the pie for a Buffalo Hot wing Pie. I fried tomatoes and broccoli and added that to teh pie with a few peppers.Not much to look at but tastes great! I'll bet with a little conventional vegan cheese, and with the right shape on the "chicken" you could fool a carnivore into thinking this was a regular "normal" pie. I like using the Bob's Red Mill GF crust and cooking it on coconut oil. It gives the crust a real crunch.

Couldn't get much easier than today's lunch. I'm in the middle of projects- making cashew milk- watermelon juice- lemon lime juice- and making some Mac n' Cheez. So when the tummy rumbled, I fed it easily!

Lunch: Amy's vegan gluten free loaf.

After eating fruit and greens for a few days, these "boxed" meals seem heavy. It tastes great, don't get me wrong, and very healthy, but it just seems very filling.

The Maui Writer's conference was a schmaltzy, glitzy affair where aspiring writers would go pitch a story and try to become well known. Sadly, the last year for this event was 2010, I got this shirt in 2008 or so. It might be collectable? And I never went!

Lunch: Amy's organic gluten free vegan meatloaf.

As a vegan I'm always looking for way to get people to follow my path, and not veganism, but eating healthy. My thoughts are that veganism is THE healthiest way to live, but I understand that for some people it's really hard giving up "conventional" Wesstern style food. So I was in the grocery store last night and noticed that Amys added a gluten free vegan loaf to their vast array of organic.

So I was eagar to try it. I usually don't eat this way- I am weening myself away from quick packaged foods, but thought I'd give it a try to tell people who aren't vegan these types of dinners are a good jumping in point if they would want to go vegan.

The meal wasn't bad. It DID taste like meatloaf, one of my favorite foods when I was a carnivore. The potatoes were good as was the veggies. So I would recommend this to anyone! Vegan or not!

I like the Galpin dealers for their name.  Someday I'll make it out to check out my namesake.

Today I went around my yard picking dandelion greens to eat later on with some spinach. Can't wait!

Lunch: Fruit!

Today is an early and easy post. Today is a fruit day- I have some errands to run and I'm loading up a big bag and taking fruit with me. I find that I have more energy when I rest my guts from cooked foods and I'm inching closer and closer to becoming completely raw. Tonight I'll have some greens, then some fruit again.

I think deep Ellum Texas in in the Texas panhandle, but I'm not sure. Another cheap Ebay purchase.

Lunch: Tofu Hot "Wings!" Yum City!

I saw a recipe for tofu hot wings and just HAD to try it. I got it here.

Yes mine look different- I wanted to get the method down before I tried making fancy shapes. You know what? They are great! They taste just like the old hot wings, at least what I can remember! Next time though, I'll drain teh tofu a little better, slice the slices thinner for crispiness. They are really REALLY good- I think it will turn the heads of the staunchest wing lover. I'm looking for some kind of chicken leg cookie cutter, so I can make these wings the next time sort of cartoon shaped. For the "ranch" dressing, I just added some hemp milk to Veganiase. Sprinkle in some parsley and oregano! Viola!

I love the message on the shirt!

I made these Purely Elizabeth cookies last night. Nice! I recommend them to anyone who, like me, was a cookie hound.

Lunch: Square pancakes wrapped around yummy fruit.

I bought a tiny square pan the other day. I saw it in the grocery store a few weeks, and have been agonizing over buying it ever since. I thought a square pancake might hold fruit inside better, like a crepe. So I finally bought the pan Saturday night, and couldn't wait to "test drive" it. So today I did, and filled up the middle with blueberries, strawberries, cherries, and pineapples. Yum! Topped with carob avocado mousse, and coconut whipped cream makes a pretty dreamy lunch!

Lunch: Epic fail.

I was experimenting. I thought I want some potatoes of some sort, so I started with fried potatoes in olive oil. Then I mashed some avocado with coconut milk and chick peas. I added fresh chives to the avocado mix, and then mixed the potatoes in. It tasted gross! That's all I have to say about that!

I love hot rodded cars. That's all I have to say about that!

Lunch: Gross smoothie.

This was the last of my kale/spinach hybrid juice. I am taking it easy on my insides today and eating just fruit and juice. The green "goo" is a celery/cucumber juice, mixed with kale and spinach. Then that mess is mixed with water
melon/strawberry lemon lime juice and hemp milk. Then Vega protein powder added to that. I actually like the taste now... and it gives me tremendous energy!

Yes I'm nostalgic. Who isn't. I remember Henry's Hamburgers in the 1960s. I don't think I ever ate at one. BUT! I saw this shirt and really waxed nostalgic and bought it, even though I'm a vegan. Maybe I could perfect a vegan gluten free hamburger recipe and open up a grilled vegan burger joint! Hmmmmmmm.....

Lunch: Kale/spinach/chard salad with HOMEMADE dressing. Recipe below.

Shirt: Pelicano Watersports

First! I was inspired to come up with a creamy alternative to a calorie/fat laden ranch dressing. Here's the skinny:

3/4 cup homemade raw nut butter (see #1 below)
3/4 cup organic canned coconut milk
2 tablespoons lemon juice (see #2 below)
1 tablespoon organic dark maple syrup
1 clove garlic, well chopped
1/2 tablespoon fresh basil
1 tablespoon organic raw tahinni

Put all in food processor and blend until smooth.

#1) My homemade nut butter is 1 cup cashews, 1 cup almonds, 1/2 cup walnuts. Blend in food processor until it turns into a butter.

#2) My go to lemon juice is something I keep on hand all the time (just like the nut butter) is a ratio of 3-1 freshly squeezed lemons and limes. I LOVE this drink. I drink at least three cups of lemon water using this as a base.

So the rest of the salad was the green mix, strawberries, blueberries, pineapple, chopped radishes and chickpeas. The dressing really was creamy, had some tang and GREAT!

I have never been to a Pelicano Watersport event in the Dominican Republic, let alone worked there as a staff member. I found the shirt at Goodwill and thought it was cool.

Easy-peasy lunch made in about 6 seconds- well a little bit more, but you get the gist. I LOVE radishes! I can eat them like candy... sometimes I'll just munch on a few whilst doing chores, or 'choring.'

A person a few years back that i knew online was having trouble with a short story he was writing, so I offered some ideas- reviewed it when it was done, and he sent me a few shirts. Brand new in wrappers- I don't know how he procured the shirts, but I am NOT a member of The Writers Guild West. At least not yet.

Lunch: Salad, chick peas and rice pasta.

Ho hum lunch- hard to top the pancake guy from yesterday. PLUS! Lots going on right near my house. It seems like this guy shot his estranged wife and mother-in-law this morning, drove 30 or so miles and tried to kill himself, right near my house. Until they found him, there was massive manhunt on. So it's been hard to concentrate on lunch when there have been police cars screeching by my house all morning, helicopters hovering overhead. Sheesh!

Since I was a truck driver for almost 30 years you see my infatuation with custom big rigs. Hence the shirt.

Pancake guy!

Lunch: Cannibalism! Ha Ha! From vegan to eating this little guy! 

Shirt: Stuckeybowl- something from the ED TV show. It’s got the NBC logo on the front pocket, so I’m assuming this is some kind of promo/employee shirt.  I bought it on my bowling shirt buying bonanza 2013. 

First easy-peasy pancake recipe: 

¾ cup Bob’s gluten free pancake mix.
1 cup hemp milk
½ tablespoon olive oil
¼ teaspoon pumpkin pie spice
1/3 cup canned organic pumpkin

Makes about 5 fairly good sized pancakes.  I like adding the pumpkin pie spice; it makes the pumpkin egg substitute really pop. And yes, this is the Bob’s recipe on the mix just modified.  I like to give credit where credit is due. I CAN make my own mix, but Bob’s is soooo much easier.  If I’m in the mood, I add about ½ teaspoon of Vega protein smoothie mix, it mixes with the pumpkin and really, really makes a tasty flapjack. 

The chocolate “hair” is my go to chco-avocado mousse. 

1 RIPE avocado,  
¼ cup carob powder
¼ cup raw organic blue agave
¼ cup unsweetened non- dairy “milk”- I used hemp. It’s my new favorite- much creamier than almond or any other.  
1 teaspoon vanilla extract. I use organic—TWO ingredients. No corn syrup! 

It’s important that you use a ripe avocado, nice and mushy. Also  unsweetened milk, if not the mousse will be too sweet!  Just put in everything in a food processor and whip away until smooth. 

I mixed some whipped cream into the pancake guy’s “hair” to make it lighter…. Sort of streaks of gray! Ha ha! The whipped cream is easy-

1 can Thai Kitchen unsweetened coconut milk---refrigerated overnight.
3 tablespoons raw coconut sugar
¼ teaspoon vanilla extract. 

Combine in a mixing bowl all the ingredients, but scoop all the milk at the top of the can. Be careful and don’t get too much of the coconut water at that has settled to the bottom of the can. Too much water will make the cream too watery to enjoy. Then enjoy whipping it good. (Devo reference there) I use unsweetened coconut milk. It’s better to add sugar than have it too sweet. AND! I’ve used all sorts of brands of coconut milk and find Thai Kitchen to be the best. It really separates well overnight in the cold- Goya is cheaper but doesn’t separate. 

I had fun building this little dude. It would be fun to do this with kids…. The only things really non-breakfast-y is the pepper handlebar moustache and the tofu whites for the eyes. I enjoyed eating the fruit scraps- the strawberry, the rest of the banana.….and the pineapple slice.

Lunch: Fried tempah/mango Amy's Sonoma burger on GF Ener-G bagel.

Lunch crept up on me today like an old woman wearing canvas shoes in a Kresges. I was surfing the Internet,  and reading up on how to iron on an ancient patch on a t-shirt. And of course, brushing up on sewing on buttons, I have several to sew this afternoon. I bought a vintage iron on patch a few years ago, from the 70s I belive, of a really cool Rolls Royce. So I was reading the best way to iron it on without ruining the ancient transfer.

So when my stomach started rumbling, telling me it was time to search for food, I was unprepared. I wanted pancakes. Hupt! No olive oil, or at least not enough for the recipe. So I just started cooking, I had some tempah that needed to be gone soon, and the mango in the fridge was getting long in the tooth too. I was frying up the mango and tempah and got hot coconut oil all over my pants! Youch! I hope it washes out- the pants are in the laundry now. So I'm glad I have a supply of frozen gluten free vegan veggie burgers and bagels. Not the healthiest, but good in a pinch.

So pancakes tomorrow after I shop!

I hope the Kresges reference didn't go unnoticed. Kresges turned into K-Mart.

I was reading about tropical destinations a few months ago, and American Samoa came up in a Google search. I read about the neat little island, and found this shirt for $2.99!

Lunch: Sweet Beet Treats!

I didn't make anything today. I was out yesterday driving around and ran into a local vegan gluten free deli in Granby CT. The Sweet Beet is a great little store, I bought some cashew mac n "cheez" and a vegetable lasagna. I also bought a box of their Tuxedo Sweeties. Yum. And yep they're gone already. I hope the Sweet Beet is around for a long time, I love the place and plan on going as often as I can.

I don't remember where I bought this old Tastee Freeze employee's shirt.. but even thought I'm a vegan, I collect all sorts of diner shirts. I thought it was cool. People think it's lame, but hey- each to his/her own. Again, I had to take it off, all the info is on the back.

Lunch: Purely Elizabeth oatmeal with fruit.

Easy lunch today. I have tons of stuff to do so in my last order to Purely Elizabeth they stuck in a packet of  their oatmeal. Thank you soooooo much! It is like the Yumsville train station; yummy all the time! I love their products, their blueberry hemp cereal is a staple of mine everyday! 

Tomorrow is the juicing day. Last night I made a green juice. I juiced celery and cucumbers in the Breville, and used that juice as the liquid in the blender when I liquified kale and spinach. Then I added green tea. Yep is look gross, and tastes worse, but I had some last night and it really picked me up and gave me some energy. So what looks bad is good for you... ha ha

Whenever I choose a bowling shirt for the #shirtoftheday I always forget that most of the good printing is on the back. So for the picture, I have to semi-disrobe... ha ha! This shirt I found on Ebay in the great Bowling Shirt Buying Frenzy of 2013. Cool, cool, cool shirt.

 I'm in the midst of making a green juice. Celery, spinach, kale English cucumbers and some green tea. So I kind of threw this together when I got hungry. I topped the roll with the nut butters, I LOVE them both, then some sliced pineapple, mango and blueberries.

I might take a gastric rest day tomorrow and just drink juice. I haven't decided yet.

I love Bill Hicks. A few years ago I had a hour commute. I listened to all sorts of stuff, and that's when I really became a Bill Hicks fan. Great comedian, gone too soon.
