Lunch: Tofu/tempah scramble with mini French Toast.

Shirt: The Mighty Boosh!

I wanted something different today, so I got out my thinking cap. I wanted French Toast, but also a tofu scramble. Soo---

First the scramble:
Three small red potatoes diced fairly small.
3/4 cup extra firm tofu
1/3 cup tempah
1/2 cup pineapples, diced small
1/2 cup mango diced small
1 medium red pepper diced small

Throw everything into a bowl with 1/2 cup nutritional yeast and 3 tablespoons of extra virgin olive oil, 1 tablespoon of Braggs liquid amino and 1/2 teaspoon Himalayan pink salt. Mix is all good. I sauteed mine about 5 minutes, or until teh potatoes were soft.

The amino darkened the mixture while it cooked. The fruit in the mix really made everything pop.

French Toast:

1 Schar's Ciabatta roll, prepared as per directions, bake three minutes per side @ 400 degrees.
1/3 rice flour and 1/3 cup almond milk (I used Pacific brand)
2 tablespoons organic coconut sugar

I cut off the ends of the roll, and then the remainder into two thick slices. Let each soak in the mixture for about 5 minutes, turning after 2 1/2 minutes. I cooked them in an open skillet in some coconut oil until brown. Here's what they looked like before the toppings:

I topped the French Toast with some whipped coconut cream and some blueberries and strawberries.

The whole meal came out fantastic! The scramble really popped with the addition of the fruit. The toast was crispy on the outside and just right and fluffy on the inside.

All in all- I can envision this meal being served at a vegan breakfast diner... now all I need is some investors. HA!

I love The Mighty Boosh- something the people from the UK can appreciate, but relatively unknown here in the States. I saw something about them a few years ago, and bought the boxed sets with all the extras. I know Neal is doing some f the characters on his show- like The Hitcher, but I'd like to see a reunion! I'd take a holiday just to see those guys perform!

Lunch: PB&J ---- sort of.

Today's lunch is a healthy variation of the old peanut butter and jelly. It's a vegan gluten free Schar's Ciabatta rolls. I prepared them per package directions, warming them for 6-10 minutes. I topped one side with a thin spread of organic cashew butter, and the other side a spread of almond butter. For the "jelly" or "jam" I added sliced strawberries and raspberries and some blueberries. Then mash it together and enjoy! WOW was it good. And it takes just as long to make as a convention white poison bread (at least for me) and peanut butter and jelly sandwich.

Lunch: Potato salad and fried tempah.

Last of the leftover potato salad. I also fried some tempah in a little olive oil, added some nutritional yeast and some liquid amino. The result: The oil made the nooch a consistency of breadcrumbs and the amino flavored it. Nice surprise, I LOVE cooking! I have to dig out my grill and try doing this outside.

I also love Hawaiian shirts, especially if it has a palm tree on it. This is an old Trader Joe's uniform shirt I think. I should go to the store and see if I can wait on anyone. Ha!

Lunch: Leftover potato/chickpea/avocado salad and red beans!

Busy day running the raods, with just enough time to eat some leftovers.

I joined the National Corvette Museum when I had my 1992 Corvette a few years ago. BUT! Due to my knee injury, I had to sell the car. Now with the surgery pending, maybe I can get another Corvette. I really REALLY love these cars. In my ideal world, I'd have a 1972 C3, a utility 2002-2004 C5 as a daily driver and a C6 ZR1.

Lunch: Picnic! Amy's Sonoma gluten free vegan burger with Follow Your Heart cheese, MELTED! All on a Ener~G bagel subbing as a bun. Potato/roasted chickpea salad! Recipe below.

Today was an excellent weather day here in the Northeastern United States. So I wanted to do a picnic themed lunch. So many newly minted vegans feel a little cheated the first year or so of their meal choice because of all the hoopla over picnics. I'm a gluten free vegan, and while have never felt this way, I can certainly sympathize So here is a great meal plan, and a potato salad to bring to your next picnic and make the carnivore's mouths water!

I roasted 1 can 16 oz. of chickpeas drained @ 400 for 35 minutes. Just enough to get them crispy. Extra virgin olive oil was involved, I soaked the little buggers good. Add salt and pepper to taste and I added a little liquid smoke and a generous dose of cayenne pepper. Dice about 8 smaller red potatoes and leave the skins on. Boil them for about 7 minutes. In a large bowl, put two RIPE avocados and 1/3 cup of grape seed oil Veganaise. Mash those two together add the potatoes and chickpeas. For a garnish, I roasted one yellow pepper in olive oil too. Makes a nice garnish and completes the flavor of the potato salad. Watch out! The chickpeas are HOT! But when added to the potato/avocado/Veganaise mixture they tone down the heat. Yummy, yummy, yummy for a picnic! I even kept the outdoorsy theme going by taking the pic of lunch on the hood of my car.

And a word of warning, the avocados must be ripe to get that mushy texture to blend with the Veganaise.

I LOVE Toothpaste for dinner. Drew is a riot, as is his better half Natalie Dee. I own a few of their shirts.

I spent 2 1/2 hours on the stationary bike today. "Rode" 39.7 miles. Almost to my goal of 50 miles before my surgery.

Lunch: Leftovers!

Wash Your Car!

Today- Herman's Hermits had a song out in the late 1960s, titled "Henry the 8th." The thing I remember about the tune is that the singer shouts: "Second verse, same as the first!" So that seems fit to describe today's lunch. Same as yesterday.

 I have two printers, BOTH need work. One needs ink and the other has a software issue, so I spent the morning fixing. So I was glad to have a quickie lunch. Those are yesterday's pancakes, smothered, I mean smothered with fruit. I bought some frozen fruit and mixed it with fresh fruit of the same. May seem like a lot of food, but my later meals are usually some kind of small salad, of some such. Something to get my greens in for the day.

I found the shirt on Ebay- I LOOOOOVE Corvettes, so this shirt spoke to me. I think I was doing an Ebay search for something Texas-y and this popped up. It might be an employee shirt? That's a question.

I am still riding the stationary bike at least two hours a day, but I never seem to leave my house. Ha ha ha! With hope, I'll make my leg muscles stronger, so my knee operation will go like the breeze. I still don't have an operation date... not a day of the month, not something that includes dinner and a movie.

I have been listening to Merel von Hoek a lot lately. This song is so beautiful it makes me cry. I wish she had more songs recorded.

Lunch: Gluten free vegan pancakes... with a twist piled high with fruit!

Sometimes ya just can't win. :) I had a hankerin for some flapjacks, so I started making them in my still torn apart kitchen. I ran out of Bob's gluten free pancake mix. So I added a little brown rice flower. Using my usual organic pumpkin flavor-er (!) this time for liquid I used some hemp milk. I kept adding, mixing , adding until I got the batter just right, and fr extra measure, I threw in some Vega chocolate protein power.

As the kids say--- Ya Gno  (like Gnu) it came out okay. The individual flappers were a little tought o figure out when to flip them, but I didn't burn anything! I piled them high with bananas, strawberries and blueberries. On top of the pile, almond crumbs were sprinkled, so yes, there are two pancakes under that pile.

Lunch: Salad and rice pasta. Simple.

Simple lunch. My kitchen is in the midst of a small makeover, so I can't use the counters. I've been wracking my head to try and think of things to make, so I have to keep things simple. I had mostly avocado, added some vegan cheese. Both the pasta and salad were sprinkled with a little nutritional yeast (nooch) of course.

Tomorrow I hope to make some vegan pancakes... maybe I'll resort to just eating cereal. ha!

I love old pickup trucks. So hence the shirt! not only do I own 70+ t shirts I also own about 20 really cool button down shirts, some with a Hawaiian flare and other with a bowling theme. So really, I could go 100+ days without duplicating a shirt. Lets' see.....

Lunch: Protein shake.

I thought I would take it easy on my digestive system today. I had a small bowl of my custom mixed cereal for breakfast,had a banana mid-morning and had a Vega protein shake for lunch. I'll have some beans later and then some juices later on. I feel better when I semi-fast once in a while, and I like the choco-protein mixed with a non-dairy milk. Today I used hemp milk.

My custom mixed breakfast cereal is as follows: Sprouted cacao rice cereal, sprouted maize cereal, a generic rice Chex, Purely Elizabeth blueberry hemp cereal/granola.Then I add walnut pieces, slivered almonds and some pine nuts.Yummy!

I love listening to SCOTS, hence the shirt. I didn't see them on that tour on the shirt- but maybe someday!

I was in teh store last night and saw these Ener-G "bagels." They aren't bagels like they sell here in teh Northeast, but man-o-man they are good! Gluten free and vegan! I had one for a supper/snack last night. I like the taste of hummus and fruit. So tasty.

Just got back from a Record Store Day trip- didn't buy anything, I wasn't really looking, but enjoy the madness.  Plus I like the smell of fresh records. Everyone seemed to be looking for that Ron Jeremy 45 RPM 7" single record. I don't know how it sounds, but the record sure got some hype. I didn't even spot a cool T-shirt I liked. Grumble grumble.

Lunch: leftovers! Tofu scramble and mac n cheez with broccoli.

I sure love leftovers, especially on a busy day. I have to fix my kitchen door, the exit to the outside world, and it's great to have something just to throw together in a few minutes. I love the cashews in the tofu scramble. 

Nope I've never been to an Orange Lake resort. This was a Goodwill find. Orange isn't my color, but I loved the palm trees. I'm a sucker for anything palm tree. Although--- I just got back from Home Depot and three people asked me for help while I was there; thinking I was a worker.

Time to get to work!

Lunch: Tofu-throw together scramble, mashed hominy sandwich.


I had no idea what to eat today- so I went picking. I had some tofu that I had to use up, so I just started to make a tofu scramble. In went chickpeas. In went nooch. In went paprika. In went mango! Cooked it up with a little coconut sugar and it came out fabulous. It might look burned in the pic, but it's just the sugar.  I bought some canned hominy the other day, so out that came, I mashed it and put it on slices of Ener-G rice toast. I covered the hominy with sun dried tomatoes, baby kale and baby spinach! No condiments! Yum!

I realize the research and practice that goes on with each passing day, and I admire her spirit. Also her pets are a riot!

Yes there are two stains on that pirate shirt. They are battle scars from the tofu... and yes I have already washed them out.

We had snow up here in New England this morning. When o when is this going to be over?

Lunch!: Vegan Mac n Cheez (from yesterday) and a kale/spinach salad.

I love fruit in my salad and today is no exception. I piled this kale/spinach side salad high with kiwi, strawberries, blueberries and mango. I still am trying kale- today I used baby kale and didn't steam it first. I think I still might be allergic to the kale, I get watery eyes afterwards, but all in all not such a severe reaction as before.

I don't know where I got this shirt, but I confess I never rode in this "Tour De Brooklyn." Maybe someday I will. It's spring and I'm getting a little antsy to ride my bike, but in May or June I am due to get another knee surgery so that probably means I another three months after that I can't ride, so that's into fall..... so maybe next year. Or a move to a warmer climate?

I'm missing my fixie though, and my Specialized Expedition, my vintage 1980s Peugeot... yes I'm a bike junkie. Here's the fixie right after I got through building it:

Lunch: Homemade (yeah!) mac n' cheez Amy's Sonoma burger on Ener-G  toast.

I finally got around to making mac n' cheez and kind of had to "wing it." I didn't have any cauliflower or white beans to put in it, so I added chick peas. Yes I really REALLY have to go shopping. I made enough for a few meals because I plan on being busy this week and it's great to just have a leftover to go to. I added broccoli to it too, yum! And you might see spinach sticking out from the sandwich-  as you know I like my greens.

I've never been to Arcadia, but someday.... it seems like a cool little town.

Lunch: Tofu scramble!

Shirt: Ha ha! Hamburger shirt.

I had a hankerin' for tofu scramble today. I usually make mine with peppers and add a few red potatoes to the mix. Today I started the lunch project and realized I didn't have a red potato and a pepper. So-- I  improvised. I used a sweet potato instead, added some chick peas, and added some raw cashews just because I spied them near my work area. I then added the nutritional yeast, some herbs and it came out great. It really surprised me.

I liked this hamburger shirt when I saw it and I don't know why. Yep I'm vegan, against animal cruelty, but I liked the saying- AND when someone mentions the shirt, I kind of tell them I'm a vegan, which opens up a discussion about being a vegan. So I think I wear the shirt as a teaching tool to the carnivorous masses. Have I succeeded? Who knows, but I wear this shirt with vegan pride.

Lunch (late): Pasta and salad.

So- I started on a small adventure today, was only supposed to take and hour, and it ended up taking all day. Sometimes, eating healthy is difficult. I usually bring food if I know I'm going to be out a long while, today I did not. So half way through my adventure, I had to duck inside a grocery store and buy something to eat. I bought granola and bananas. *Sigh* Sometimes I wish the world was different, and we had healthier choices on every street corner instead of the crap that is sold by that big yellow "M" arches and that meaty King. I don't even think their salads are all that great. So here I am, finally eating my lunch- I'll have to call it Lupper... lunch/supper!

Funny things happen on the way to good intentions. But first:

Lunch: Amy's mac 'n cheese (gluten and dairy free!) Amy's Sonoma burger (Ditto!) on Ener-G white rice loaf (Double ditto!) and leftover salad.

Shirt: Dr Seuss bike jersey.

I really, REALLY need to cook. I am kind of busy, so I made some "fast food" today. I have the bread and Amy's gluten free products on hand for emergencies, I do like cooking my own mac-n;-cheez and baking my own bread. Ah well, maybe tonight I'll make some mac. I have a sweet potato just itching to be cut up and give itself up to the goodness that is mac n' cheez!

The shirt? The good intentions mentioned earlier. A few years ago, I had all the good intentions of getting fit, losing weight and riding my bike a LOT! My schedule was great- every third week I had 5 days off in a row, and then a split Wed.-Thurs off- so I had lots of free time. I had a bike, so I went out and bought a whole bunch of bike specific clothing.  I like the Green Eggs and Ham book, so I got that one, even though I'm a vegan and neither appeals to me. So anyway----- none of the jerseys fit me that great- I was too big so I tucked them away to gather dust, while I went on to even gain more weight and not have time to ride.

But! Since I started losing weight late last spring, and dropping 70 pounds- I found my old jerseys fit now! So I've been pedaling around on my stationary bike, well around my bedroom, and not around, just in one spot. But I'm so happy to finally wear my jerseys. Today I got off the bike and made lunch, not even thinking I still had on my jersey! Ha ha!

Lunch! Look at the size of that salad!

Funny how when you eat healthy, and get healthy your body craves healthy food. I craved greens all morning, so I went for it. This monstrosity has bok choy, steamed kale (yes I ate it again- we'll see what happens) spinach, broccoli, romaine, avocado, strawberries, blueberries, pineapples, mango and chick peas. As I was building this, I realized I had way too much food for me, so I saved it and I have enough left over for two whole meals.

I like wearing my surname on my shirt- no relation to the founding Galpins in CA, at least I don't think so. I found this cool shirt a few years ago on Ebay- so as a plug, if you need some movie stuff, call them. :) Someday, I would LOVE to visit the dealer, and since my brother is in the car business (I just dabble) it'd be nice to see the dealership/rental place/Galpin auto sports etc.

I also need a better set up for my lunch/shirt selfies. I never can get the pic right and it always comes out blurry.
